The top round roast is a lean, evenly shaped cut from the round that's practically made for homemade roast beef. Its uniform shape means it cooks evenly, and its fine grain slices into clean, tender sheets when you take it thin.
Ours is grain-finished Angus from our Indiana pastures — more flavorful than the standard round roast, and versatile enough for a proper Sunday roast or a week's worth of sandwiches.
Season it simply, roast it low, and pull it at rare to medium-rare; like all lean round cuts, it turns dry if overcooked. Rest it completely before slicing as thin as you can across the grain. Better than anything from the deli counter, by a mile.
