Red Wattle Pork Chops — Not the Dry Chop You Remember.

If pork chops mean dry and forgettable to you, you've never had a Red Wattle chop. This rare heritage breed produces deep-red, well-marbled pork with fat running through the meat — which means these bone-in chops stay juicy and flavorful in a way commodity pork simply can't.

We raise our Red Wattle hogs on pasture, and it shows in the color, the marbling, and the taste. These are chops with genuine character, from a breed most people have never had the chance to try.

The secret is not to overcook them: sear hard for a golden crust, then pull them at a blush-pink center and let them rest. That marbling keeps everything moist and rich. Serve them simply and let the pork speak for itself.

Intentionally raised. For those who believe in better.
