The difference here is what it's made of. Most commercial pepperoni and pepperoni-style snack products are built from pork trimmings, beef trimmings, or some combination of both — whatever's left over after the cuts anyone wants are taken out. Ours start with grain-finished Angus beef from our Indiana operation, the same animal behind our steaks and roasts. The pepperoni seasoning brings out a richness in good beef that it doesn't find in lesser ingredients. The smoke deepens it. The result is a snack stick that tastes like what pepperoni always should have been.
