Eye of Round Roast — The Homemade Roast Beef Cut.
The eye of round is the leanest roast on the animal, and it makes the best homemade deli beef you'll ever slice. It's a tight, uniform cylinder from the round with almost no fat, which means it demands a gentle hand — and rewards it richly.
Ours is grain-finished Angus from our Indiana pastures, so even this ultra-lean cut carries good flavor. The trick with the eye of round is temperature: cook it low and pull it early.
Roast it low and slow and stop at rare to medium-rare — pushed further, a lean cut like this turns dry. Rest it fully, then slice as thin as your knife allows. Piled on a sandwich or served cold, it's a world away from anything in a plastic tub.
