Same grain-finished Angus foundation as the rest of the lineup — 80/20, double ground, no fillers — but with sautéed mushrooms and Swiss cheese worked directly into the grind. Not a topping. Not an afterthought. Blended in, so every bite carries the umami depth of mushroom and the creamy melt of Swiss from the inside out.
The mushrooms bring an earthiness that complements the fat of the beef in a way that's hard to explain until you've had one. The Swiss melts through as it cooks, binding it all together into a patty that's heavier on flavor than it looks.
Four patties per vacuum-sealed pack, portioned at 1/3 lb each. Cook them on high heat — cast iron or open grill — and resist the urge to press them down. Let the fat work. A slice of extra Swiss on top never hurts, but it's already plenty without it.
